This pie is ideal for those times when your last ripe bananas are starting to turn black. Don’t forget that you can replace white sugar with natural sugar, for example, which is much healthier for you.

To make this delicious banana cake you will need the following ingredients:

  • 15 grams of flour
  • 3 tablespoons honey
  • 50 grams of fresh low-fat ricotta cheese
  • 100 ml neutral vegetable oil
  • 5 grams baking powder
  • 5 grams powdered cinnamon
  • 3 large eggs
  • 4 large ripe bananas
  • 100 grams of oatmeal
  • A pinch of salt

Preparation method

  • Start by mixing all the dry ingredients (flour, salt, cinnamon and baking soda) in a bowl and set it aside.
  • In another bowl, beat the eggs with the oil until slightly frothy.
  • Mash the bananas well and add the honey until you have a paste.
  • Then mix the banana paste, the ricotta, the sugar and the mix of eggs and oil.
  • Gradually add the oats and dry ingredients to this mix so that the wet and dry ingredients are mixed slowly.
  • Then grease a cake tin and sprinkle some flour in it. Pour in the mixture and place in a preheated oven (180ºC).
  • Baking takes between 40 and 50 minutes. To check if it is cooked properly, insert a knife into the cake and check if it comes out clean.
  • Let the cake cool and serve it as you like.

Vegan and Celiac Friendly Banana Cake with Walnut

You only need eight ingredients to make it and it takes very little time.

Ingredients

  • 40 grams of brown sugar. You can also use honey.
  • 300 g cornstarch or another gluten-free flour
  • 2 grams ground ginger
  • 2 grams vanilla extract
  • 100 ml neutral vegetable oil
  • 100 ml almond milk
  • 5 grams baking powder
  • 5 grams ground cinnamon
  • 200 grams peeled and finely chopped walnuts
  • 3 large ripe bananas
  • The zest of 1 orange

Preparation method

  • Start by mixing all the dry ingredients (cornstarch, baking soda, salt, cinnamon, and ground ginger) in a bowl and set aside.
  • Mash the ripe bananas with a fork until you have a paste.
  • Beat the almond milk with the oil and sugar until it foams slightly.
  • Add the vanilla, orange zest and mashed bananas to the mix.
  • Gradually add the dry ingredients, without stopping to mix, until you have a smooth dough.
  • Finally, mix in the chopped walnuts.
  • Pour the mixture into a greased and floured cake tin and place in a preheated oven (180ºC).
  • Cook it between 35 and 40 minutes. To check if it’s cooked properly, insert a knife and see if it comes out clean.
  • Let cool and serve as you wish.
