- 1 cup white wine (250 ml)
- 2 carrots

- 2 peeled garlic cloves
- 1 tablespoon wheat flour (15 gr.)
- pinch of ground black pepper
Preparation
- To start, cut the onions, garlic and carrots into small pieces. Put the olive oil in a pan and sauté the vegetables.
- You know when to stop: as soon as they are golden brown and start to smell delicious.
- Season to taste with some salt and a pinch of ground black pepper.
- You have to immediately add the flour and then let everything simmer. This step is very important!
- Then lower the heat and add the cup of wine. Let this cook for 25 minutes.

- 400 grams of minced beef
- 200 grams of minced pork
- 2 eggs
- 3 tablespoons Parmesan cheese (45 gr.)
- 1 slice of bread cut into pieces
- 2 finely chopped parsley sprigs
- 1/2 onion cut into pieces
- 1 tablespoon ground black pepper (15 gr.)
- 3 tablespoons olive oil (45 ml)
- 1 tablespoon salt (15 gr.)
Preparation
- First, put the bread in a medium bowl, along with the finely chopped onion.
- Mix with your hands until the juice from the onion moistens the bread.
- Add both types of ground beef, the eggs, garlic, parsley and Parmesan cheese and continue kneading. Season it with the salt and pepper. Make sure all ingredients mix well together.
- Then, using a large spoon, make the meatballs. If you want, you can add some wheat flour to help the meat stick together.
- Repeat until you have used all the meat. Then set it aside.
- Then put the olive oil in a frying pan and put it on medium heat. Once the oil is hot, add the meatballs and fry them until golden brown.
- Finally, place them in a large bowl and pour the Spanish sauce over them.
