- 7 cups carrots, grated
- 2 cups of flour
- 4 eggs

- 2 tablespoons yeast
Ingredients for the glaze
- 750 grams of cream cheese
- 1 ¼ cup powdered sugar
Preparation
- First of all, wash the carrots and peel and grate them.
- Then preheat your oven to 175 C.
- Then combine the flour, salt, cinnamon and yeast in a large mixing bowl. We recommend sifting the flour first.
- Then, in another bowl, beat the eggs, along with the white and brown sugar, until well dissolved.
- Gradually add the egg mixture to the bowl of dry ingredients. Mix everything well until you have a smooth, homogeneous batter.
- Then add the grated carrots and stir well to integrate them into the dough.
- Now it is also time to add the oil. Add little by little while stirring.
- Now you can grease your cake tin and pour the batter into it. Place this in your preheated oven and let it bake for about 45 minutes.
- For best results, use a 20cm baking tin. That way you get a large cake, which you later have to cut in half horizontally.
- When the cake is well baked, remove it from the oven and let it cool.
- In the meantime, you can prepare your frosting. All you need to do is mix the cream cheese and powdered sugar with a stick blender.
- Once your cake has cooled, cut it in half horizontally. Then spread half of your icing over the bottom half of your cake and place the top half back on top.
- Finally, use the rest of the icing to cover the top of your cake. Then put it in the fridge to cool and then… enjoy!
Vegan carrot cake
Ingredients
- 2 cups whole wheat flour
- 1 ¼ cup brown sugar
- 6 cups grated carrots
- 1 cup of water
- ¾ cup olive oil or sunflower oil
- 1 pinch of salt
- 1 teaspoon cinnamon powder
- the marrow of a vanilla pod
- 1 pinch ginger powder
- 1 teaspoon dried yeast
Preparation
- First wash, peel and grate your carrots. Also preheat your oven to 175 C.
- Then sift the flour into a bowl and add the sugar, salt, yeast, cinnamon and ginger. In other words, all the dry ingredients except the vanilla. Mix well.
- In another bowl, add the oil, vanilla and water and mix well.
- Then slowly add the contents of the second bowl to the first. Keep stirring constantly to get a smooth, homogeneous mixture.
- Then add the grated carrots and mix well with a spoon.
- Now grease your cake tin and put the cake mixture in it. Then place it in the preheated oven and let it bake for 40-45 minutes.
