  • 1 cup ground almonds (150 gr.)
  • 4 tablespoons sugar (60 gr.)
  • 1 cup icing sugar (120 gr.)
  • 3 proteins
  • half a tablespoon of ground cinnamon (8 gr.)
  • half tablespoon lemon juice (8 ml)
  • 1 tablespoon butter (20 gr.)
  • 1 tablespoon wheat flour (15 gr.)

Preparation

  • First, take a medium bowl and mix the ground almonds with the powdered sugar and ground cinnamon.
  • Then slowly add the egg white and lemon juice. Mix everything with a hand mixer. Make sure the mixture has a sticky but compact consistency.
  • Then take a baking tray and spread some butter on it and sprinkle with flour. That way your macarons won’t stick.
  • Once you have the desired texture, make balls of the dough.
  • Then sprinkle the sugar on a plate and roll each macaron in it. Make sure they are not too big so that they all fit on the baking sheet.
  • Before putting the baking sheet in the oven, flatten the balls slightly. Don’t worry, they will rise while baking.

  • 200 gr. butter
  • 1 tablespoon vanilla extract (15 ml)
  • 2 tablespoons whipping cream (30 ml)
  • 1 tablespoon grated lemon zest (15 g)
  • 1 tablespoon cocoa powder (15 gr.)

How do you make the macarons?

  • To start, whisk the egg whites, salt and icing sugar in a bowl until you have a mixture with stiff peaks.
  • Then add the ground almonds and food coloring (whatever color you like). Put the mixture in a piping bag.
  • Then cover a baking tray with baking paper and pipe the macarons on it using the piping bag. Leave enough space between the cookies so that they don’t stick together during baking.
  • Finally, put them in the oven at 200 C for 10 minutes. After that time, remove them from the oven and let them cool while you make the filling.
