Ingredients

  • 1 cup sunflower seeds, soaked overnight
  • 1/2 cup of kombucha, water kefir, coconut kefir, kimchi liquid, or unpasteurized craft beer
  • 2 tablespoons lemon juice
  • 1 clove of garlic
  • 1 teaspoon salt
  • Freshly ground black pepper (to taste)
  • 2 tablespoon nutritional yeast
  • cup dried herbs such as thyme, rosemary, oregano

Preparation

  • To start, soak the sunflower seeds in water for at least 8 hours.
  • Then crush the seeds in a blender and mix them with the fermented vegetable liquid of your choice until you have a creamy texture.
  • Then add the other ingredients except the spices.
  • Then continue blending for a few minutes to improve the texture.
  • Then place the mixture in a clean cloth bag, the kind used to make plant-based milk, and hang it on a hook in the kitchen for 8-12 hours. Make sure to place a bowl underneath to catch the mixture. (A new/clean sock with a compact structure is great for this purpose if you don’t have cheesecloth.)
  • Then remove the cheese and knead it into shape.
  • Roll your cheese ball in the herbs to coat it evenly.
  • The cheese is now ready to eat, but the taste will improve if you let it age a bit. To do this, let it dry in a cool, dry and dark place for about two weeks. During this period, you should turn the cheese ball every 12 hours.
  • Then your cheese is really ready.

2. Cheese from hemp seeds

  • A ½ cup nutritional yeast
  • A cup of hulled hemp seeds

Preparation

  • First, put all the ingredients in a blender and blend them into a smooth, thick cream.
  • Then pour the mixture into a glass jar with a lid, leaving the top quarter of the jar free for the cheese bacteria to ferment.
  • Then cover the jar with a clean cotton cloth and store in a cool, dry, dark place for 12 hours to ferment.
